Sweet as Jam

It seems that people can be divided into two groups - 
those who do and those who don't like Guavas.  


I am a loyal supporter of this unappreciated fruit and now that it is in high season I decided to make my first jam of the year. I made Guava jam a couple of years ago with vanilla pods and this time I though I may try something a little different - a cardamom and cinnamon combination. It came out great! Really delicious!  


If anyone wants to try: 1200g fruit + 1000g sugar + 3 cinnamon sticks + 5 cardamom seeds (whole seeds, not ground) + juice from 2 lemons. Bring carefully to a boil (otherwise you spend an hour cleaning a sticky mess off your stove) and simmer for an hour and a half. Don't forget to sterilize the jars. Top tip: add one peeled and diced apple for a pectin reinforcement.

That jam looks so yummy and it is such a sunny photo - how cheery! I live in the Pacific NW where we have a lot of "liquid sunshine" this time of year. Looks like you do some fun handmade things! =) Heidi (BYW)
